Double-sided scanning leaves an empty back page after every single-sided sheet, and some exports add stray blank pages at the end. When you open a PDF on this page, every page is checked and the ones that are (almost) completely white are marked for removal. Look over the marked pages, click any you want to keep, then click Remove pages.
